No white sugar, no flour, but full of delightful taste! And my hubby approved–a very big deal!
Almond Cinnamon Balls
2 cups almond flour –simply process whole raw almonds; measure after processing! I like mine a bit chunky, so I don’t process it too too long
4 T honey
2 T Ground Flax Seed — coffee grinder is great to ground these!
1 tsp cinnamon
1 tsp baking soda
Turn oven on to 275 degrees F and coat cookie sheet with nonstick cooking spray. Put all ingredients in a bowl and work into a thick, sticky paste with a fork. With damp fingers (I keep dipping mine in water), make 36 little balls and place them on cookie sheet. Bake in preheated oven for about 20 minutes.

My family and I went for our yearly fall get-away week-end in West Virginia and we traditionally each bring one of the meal. It is always fun to taste every one’s recipes. This year, my daughter picked breakfast and she made apple butter for us. We woke up Saturday morning to a cabin filled with the aroma of cinnamon and apples, and it was just lovely. I couldn’t wait to try to make my own and got to it right as I got home on Sunday. So here it is:
Wash apples and cut into chunks (skin on). Fill crock pot to the top with apple chunks, add 1 tablespoon of cinnamon and a few dashes of nutmeg.
Add a few tablespoons of apple juice and a sprinkling of brown sugar. Cover crock pot and cook on medium for 15 hours. When cooled enough, process through a food processor or a mixture.
And there you have it!
We had ours with warm brown bread… Life is good!
