Liver Paté

We bought a quarter beef this winter, and with our order came a 1 lb package of liver. I don’t love liver anymore, so I wasn’t sure what to do with it. Then I remembered about the pate from my childhood, and I tried to reproduce it. Didn’t do a bad job at all, actually. You can certainly substitute chicken, goose of veal liver if you wish.

1 lb of liver

1 large onion, cut in big chunks

4 cloves garlic

one small hot pepper

Put all of it in a saucepan, cover with water; bring to a boil and simmer for 30-40 minutes.

Drain. Cut liver in smaller pieces. Discard hot pepper.

Put liver, onion and garlic in food processor. Add:

1 tsp oregano

Salt and pepper to taste

3 T butter, softened

Process until smooth. Put in glass jar; cover. There you have it!
