Coconut Power Mini Bites
These can double up as energy bars, by the way:
1 cup peanut butter
10 dates, roughly chopped
1 1/2 cups shredded unsweetened coconut
1/c cup flax seed meal
1 scoop chocolate protein powder
3 T unsweetened cocoa
Xylitol to taste ( I hardly put any, just about 1 1/2 T)
1/4 cup water or more
1/3 cup dark mini chocolate chips
Put all ingredients but water and chocolate chips in food processor. Once mixed, add water a bit at a time until the consistency is what you want. Add chocolate chips. Make bite sized balls and that’s it!
